Our Strawberries & Cream Marshmallow Sundae is one of those little desserts that looks like you tried, and comes together in about five minutes. No baking, no fuss.
It starts with a scoop of vanilla ice cream, a drizzle of strawberry sauce and a handful of fresh strawberries. Then comes the good part: a buttery crumble made from our S'mores Graham Crackers, and our Strawberries & Cream marshmallows resting on top.

Why We Use S'mores Graham Crackers
A sundae is all about contrast. Something cold, something soft, and something with a little bite.
Our S'mores Graham Crackers are the bite. Crushed into a rough crumble, they bring a buttery cinnamon warmth and a delicate crunch that plays beautifully against the cold vanilla and the soft marshmallow on top.
They are not just for s'mores. Use them for cheesecake bases, slices, sundaes and any dessert that could use a little extra magic.
Why We Use Strawberries & Cream Marshmallows
This is the little detail that turns a bowl of ice cream into something you want to photograph.
Our Strawberries & Cream 6PC marshmallows are soft, squishy and layered with real strawberry flavour, each one finished with a sweet little strawberry on top. Resting on the sundae, they add a gentle chew and that pretty pink finish.
One box tops two generous sundaes, with a few left to nibble while you build.
Strawberries & Cream Marshmallow Sundae Recipe
The Sundae
- 2 generous scoops vanilla ice cream
- 6 to 8 fresh strawberries, some sliced, some left whole
- 2 to 3 Cloud Theory S'mores Graham Crackers, for the crumble
- 1 box Cloud Theory Strawberries & Cream 6PC Marshmallows
- Strawberry sauce, store-bought or the quick version below
Quick Strawberry Sauce, optional
Lovely to make, but a good store-bought strawberry sauce works beautifully too.
- 1 cup strawberries, fresh or frozen, roughly chopped
- 2 tablespoons caster sugar
- 1 teaspoon lemon juice
- 1 tablespoon water
Scoop by Scoop
Make the Graham Crumble
Place 2 to 3 Cloud Theory S'mores Graham Crackers into a zip-lock bag and crush them with a rolling pin, or chop them by hand.
Keep it rough, with a few larger pieces. A little texture is part of the charm.
Quick Strawberry Sauce, optional
Add the strawberries, sugar, lemon juice and water to a small saucepan.
Simmer gently for 6 to 8 minutes until glossy and syrupy, mashing lightly with a fork. Set aside to cool a little.
Short on time? A good store-bought strawberry sauce is perfectly lovely.
Add the Ice Cream
Add two generous scoops of vanilla ice cream to your prettiest glass or bowl.
Drizzle the Sauce
Spoon over the strawberry sauce and let it run down the sides.
Scatter and Crunch
Add the fresh strawberries and a generous handful of the graham crumble.
Crown with Marshmallows
Finish with the Strawberries & Cream marshmallows on top.
Serve
Enjoy straight away, while everything is soft, cold and pretty.

Make Ahead
A sundae is best built and enjoyed right away, while everything is cold and soft.
You can prep the pieces in advance though. Keep the graham crumble in an airtight jar and the strawberry sauce in the fridge for up to five days, then build in minutes whenever the craving strikes.
