Why We Use S'mores Graham Crackers

Traditional rocky road usually begins and ends with chocolate, marshmallow and nuts, but we wanted to create something with even more texture and flavour.

Our S'mores Graham Crackers make the perfect base. They bring a buttery cinnamon warmth and a delicate crunch that balances beautifully with the soft marshmallow and rich chocolate layers.

They are not just for s'mores. Use them for cheesecake bases, slices, tarts and any dessert that could use a little extra magic.

The Recipe

Cloud Theory Rocky Road Slice Recipe

Makes
5–6 generous long slices

Equipment

  • 20 x 20 x 5 cm square baking tin
  • Baking paper
  • Food processor or rolling pin
  • Stand mixer or electric mixer
  • Sugar thermometer
  • Medium saucepan

Ingredients β€” S'mores Graham Cracker Base

  • 2 cups finely crushed Cloud Theory S'mores Graham Crackers, approximately 3 packs
  • ΒΌ cup granulated sugar, or 3 tablespoons firmly packed light brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt, optional
  • 6 tablespoons unsalted butter, melted and cooled slightly

Cherry Layer

  • 1 cup cherry jam, approximately 320 g

Vanilla Marshmallow

This recipe makes more marshmallow than you will need for the slice.

  • Β½ cup (125 ml) warm water
  • 3 tablespoons gelatine powder, preferably Cloud Theory Cloud Bloom Gelatin
  • 1Β½ cups (330 g) caster sugar
  • β…” cup (230 g) liquid glucose
  • Β½ cup (125 ml) water, extra
  • 1 teaspoon vanilla bean extract

Chocolate Topping

  • 200 g milk chocolate buttons
  • 75 g roasted almonds, roughly chopped
  • 75 g glacΓ© cherries, halved or roughly chopped

Method

Layer by Layer

Prepare the Tin

Lightly oil a 20 x 20 x 5 cm square baking tin.

Line the base and sides with baking paper, leaving enough overhang to help lift the finished slice from the tin.

Make the Graham Cracker Base

Preheat the oven to 175Β°C.

Place the Cloud Theory S'mores Graham Crackers into a food processor and pulse until they form fine, even crumbs.

Alternatively, place the crackers into a large zip-lock bag and crush them thoroughly with a rolling pin.

Transfer the crumbs to a medium mixing bowl. Add the sugar, cinnamon and salt, then stir until combined.

Pour over the melted butter and mix with a fork until every crumb is evenly coated. The mixture should resemble damp sand and hold together when pressed between your fingers.

Transfer the crumb mixture to the prepared tin.

Using the flat base of a measuring cup or drinking glass, press the mixture firmly and evenly across the base.

Bake for 8–10 minutes, or until lightly golden and fragrant.

Allow the base to cool completely.

Add the Cherry Jam

Spread the cherry jam evenly over the cooled graham cracker base.

Set aside while you prepare the marshmallow.

Bloom the Gelatine

Place the warm water into the bowl of a stand mixer.

Sprinkle the gelatine evenly over the surface and allow it to bloom for approximately 10 minutes.

Prepare the Sugar Syrup

Place the caster sugar, liquid glucose and extra water into a medium saucepan.

Cook over medium heat, stirring gently until the sugar has dissolved.

Once dissolved, stop stirring and bring the mixture to a boil.

Continue cooking until the sugar syrup reaches 120Β°C on a sugar thermometer.

Whip the Marshmallow

With the mixer running on low speed, carefully pour the hot sugar syrup into the bloomed gelatine in a slow, steady stream.

Pour the syrup down the inside of the bowl rather than directly onto the whisk.

Increase the mixer to high speed and whip for approximately 3–5 minutes, or until the marshmallow becomes thick, glossy and pale.

Add the vanilla bean extract and mix briefly to combine.

The marshmallow should still be soft and pourable.

Add the Marshmallow Layer

Pour enough marshmallow over the cherry jam to create an even layer approximately 2–3 cm thick.

You will have marshmallow left over. Pour the remaining mixture into a separate lined and lightly oiled container to set and enjoy later.

Working quickly, smooth the top of the marshmallow with a lightly oiled spatula.

Leave the slice uncovered at room temperature for 6–8 hours, or overnight, until the marshmallow is completely set.

Add the Chocolate

Melt the milk chocolate buttons gently in the microwave in 20-second intervals, stirring between each interval until smooth.

Alternatively, melt the chocolate in a heatproof bowl over a saucepan of gently simmering water.

Allow the chocolate to cool slightly before spreading it over the set marshmallow in a thin, even layer.

Decorate

While the chocolate is still soft, scatter over the roasted almonds and glacΓ© cherries.

Gently press the toppings into the chocolate so they stay in place.

Allow the chocolate to set completely before slicing.

Pro Tip

How to Cut Rocky Road Slice Cleanly

Lift the rocky road slice from the tin using the overhanging baking paper.

Prepare a jug or bowl of boiling-hot water.

Dip a large sharp knife into the hot water, then wipe it completely dry.

Use the hot knife to gently score the chocolate topping first. Move the knife backwards and forwards in a careful sawing motion rather than pressing straight down, as too much pressure may crack the chocolate.

Once the chocolate has been scored, continue cutting through the marshmallow and graham cracker base.

Wipe the knife clean and dip it back into the hot water before every cut.

This helps the knife glide through the chocolate and marshmallow while keeping the marshmallow layer beautifully clean and white.

Cut into 5–6 generous long slices.

Storage

Store the rocky road slice in an airtight container in a cool, dry place for up to five days.

During warmer weather, keep it refrigerated and allow the slices to sit at room temperature for a few minutes before serving.
