Winter S'mores Platter

No fire pit? No problem.

Some of the best nights don't need a campfire. Just a warm oven, a big platter, and a bit of chaos while everyone builds their own.

This is how we bring s'mores indoors when winter entertaining moves inside, or the weather has other plans: a warm, golden marshmallow dip at the centre of a build-your-own spread. Set it on the table, pull up the graham crackers, and let people go for it.

Ingredients

  • 3 cups large marshmallows
  • 1/2 cup chocolate chips
  • 12 sheets graham crackers
  • 1 cup pretzel sticks
  • 2 cups fresh strawberries
  • 1 1/2 cups chocolate pieces or squares
  • 1 cup raspberry liquorice pieces
  • 1/2 cup strawberry sauce, for dipping
  • 1/2 cup chocolate sauce, for dipping
  • 1 tsp unsalted butter, for greasing the pan

Method

Preheat the oven. Preheat your oven to 180°C (350°F). If using a cast iron skillet, place it in the oven while it preheats to get a head start on browning.

Prep the pan. Lightly grease an oven-safe skillet or baking dish with the butter.

Layer the dip. Scatter the chocolate chips across the base of the pan, then arrange the marshmallows on top in a single, even layer, covering the chocolate completely.

Bake until golden. Bake for 12–15 minutes, until the marshmallows are golden and bubbling on top. Watch closely in the last few minutes, marshmallows can go from golden to burnt quickly.

Build the platter. While the dip bakes, arrange the graham crackers, pretzel sticks, strawberries, chocolate pieces, and raspberry liquorice around your largest platter or board, leaving a space in the centre for the hot pan.

Rest, then serve. Carefully place the hot pan in the centre of the platter (use a trivet underneath) and let it rest for 5 minutes before serving with strawberry sauce and chocolate sauce alongside for dipping.

Notes: Best served immediately while the marshmallow top is warm and gooey, it will firm up as it cools. For a deeper caramelised finish, broil for 1–2 minutes at the end instead of extending the bake time. Swap mini marshmallows for large if that's what's on hand; just reduce the bake time slightly and watch closely.

The platter is really just a starting point, swap in whatever your crowd loves. Raspberry liquorice and strawberry sauce are our go-to, but Oreos, wafer biscuits, or a scoop of peanut butter alongside the chocolate all work just as well.
