Ingredients

  • 150 g Cloud Theory Toasted Coconut Marshmallows, cut in half

  • 600 g milk or dark chocolate, chopped

  • 150 g roasted almonds, roughly chopped

  • 200 g glacé cherries, roughly chopped

  • Optional topping: extra chopped almonds, cherries, and marshmallows

How to Make Toasted Coconut Rocky Road

Step 1: Prepare the tray

Line a 20 × 20 cm square baking tray with baking paper, leaving a little overhang for easy removal.

Step 2: Melt the chocolate

Place the chocolate in a microwave-safe bowl. Melt gently on low heat in 30-second bursts, stirring between each burst until smooth and glossy.
Reserve approximately 150 g of the melted chocolate for the top layer.

Step 3: Build the rocky road

In a large bowl, combine the toasted coconut marshmallows, roasted almonds, and glacé cherries.
Pour over the melted chocolate (excluding the reserved portion) and gently fold until evenly coated.

Step 4: Press and smooth

Transfer the mixture into the prepared tray.
Place a sheet of baking paper over the top and press down firmly using another tray of the same size to create an even surface.

Step 5: Finish with chocolate

Remove the baking paper and pour the reserved melted chocolate over the top.
Gently tilt or swirl the tray so the chocolate coats the surface evenly.

Step 6: Decorate

Sprinkle with extra chopped almonds, glacé cherries, and marshmallows for a beautiful finish.

Step 7: Set and slice

Allow the rocky road to set at room temperature or in the fridge for 2–3 hours, until firm.
Remove from the tray and cut into squares.
